Hot recipes for the cold season

As the weather gets colder, many of us choose to stay in to eat and to cook spicey and healthy meals that gives us the extra energy this season requires. Below you will find two tasty easy to cook fish dishes. The recipes have been chosen to work with tilapia; a low-cost fish that can be found frozen in most supermarkets even if you happen to be located hundreds of miles from the nearest lake.

Tilapia with spicy mango salsa

Mango salsa ingredients

  • 1 mango (as ripe as possible)
  • 1 ripe avocado
  • 3 tomatoes
  • 1 medium sized red onion
  • 1 jalapeno pepper
  • 1/4 cup chopped fresh cilantro
  • 1 lime
  • 1 tablespoon minced fresh ginger root
  • 1 teaspoon salt

Other ingredients

  • 2 tablespoons of olive oil
  • 2 tablespoons of grated orange zest
  • 1/4 cup freshly squeezed orange juice
  • Crushed red pepper flakes to taste
  • Coarsely ground black pepper to taste
  • Salt to taste
  • 4 tilapia fillets

Directions

1.) Start by preheating the oven to 400 degrees F or 200 degrees C.

2.) Peel,seed and dice the mango, avocado and tomatoes.

3.) Now take the red onion, cilantro and jalpeno, chop them into small pieces and mix them with the mango.

4.) Squeeze the juice of the lime into the bowl and add the zested peel as well.

5.) Now it is time to add the salt and ginger to the mix and make sure that everything is evenly distributed. But the mixture on the countertop and start preparing the fish.

6.) Prepare the fish by placing olive oil, grated orange zest, and freshly squeezed orange juice in a shallow baking dish and combine well. Add salt, black pepper and red pepper flakes to taste.

7.) Rinse the tilapia fillets in water and pat them dry.

Put the fillets in the baking dish while making sure you coat both sides with seasoning.

9.) Place in the oven and bake for 10-12 minutes, until you can easily flake the fish with a fork.

10.) Place the tilapias on serving plates and spoon plenty of mango salsa over each fillet.

Tips! This tilapia recipe tastes great with Basmati rice, especially if you also add some wild rice (Indian rise).

Tilapia Pancho villa

Ingredients

  • 1 tablespoon of olive oil
  • 4 tilapia fillets (roughly 4 ounces or 100 grams each)
  • Green chilli peppers to taste
  • 1 ounce of canned diced tomatoes (10 ounces or 250-300 grams)
  • Fresh cilantro to taste
  • 1 lime + 1 lime

Instructions

1.) Preheat the oven to 350 degrees F or 175 degrees C.

2.) Use the olive oil to coat one side of four pieces of aluminium foil (each piece should be roughly 8×10 in or 20×25 cm).

3.) Place each tilapia fillet in the centre of a piece of foil.

4.) Pour the tomatoes in a bowl and add the green chilli to them after you seeded and chopped them.

5.) Mix the tomatoes and chille well and put the mixtures on the tilapia fillets.

6.) Mince the cilantro and juice one lime and pour everything on top of the tomato mixture. (If you are unsure of how much cilantro to use I recommend 4 tablespoons)

7.) Thinly slice the second lime and place two slices on top of each fillet.

8.) Close and seal the foil packets and place them on a baking tray.

9.) Bake the fish in the oven until the tilapia can be easily flaked with a fork. This normally takes around 20 minutes if the oven is preheated.

Tips! You can add chilli flakes to the tomato mixture to make the dish a bit stronger.
