Never mix new and old milk together.

Sour Milk: Milk straight from the cow is slightly alkaline, but as it ages, lactic acid is formed and it becomes what we call ‘sour’. Pasteurizing or scalding the milk slows down this process. Milk which is ‘just on the turn’ can be revived by boiling with a pinch of bicarbonate of soda to restore the alkalinity. Once the milk has gone too far and has curdled, it can be strained through (cheese) cloth, thereby separating the curds from the whey. The curds can be used as a filling for cakes, tarts, scones etc and the whey can be used as the liquid for making scones, cakes and soups etc., as it still has much goodness.

Evaporated Milk: Evaporated milk is ordinary milk, which has had some of its water content driven off by heat in some way or other before being canned. Once reconstituted by adding water, it will last only slightly longer than fresh milk.

Condensed Milk: This form of milk is merely evaporated milk to which sugar has been added before being placed in its container. The sugar acts as a preservative and preserve the milk for about a week. Do not keep in the tin, but decant it into a jug or bottle.

Dried Milk: Dried milk comes is available in a variety of forms and particular attention should be paid to the instructions on the label. Iron Chef: Japan’s Culinary Sensation Takes America By Storm

‘Iron Chef’ is a crazy Japanese import cooking game show that features accomplished chefs from around the world going head to head in a competition format that’s part Julia Child, part pro wrestling. Even non-foodies are drawn to the show for its sheer entertainment value.

The show was originally created by the Fuji TV network in the Japan, and the original Japanese title translates literally to The Iron Men of Cooking. The premise behind the competition is even more outlandish. An eccentric millionaire and food lover MC Kaga, summons the summons the finest chefs in Japan to do battle in his kitchen stadium. Also in residence are three Iron Chefs, each representing a different type of cuisine (Chinese, French and Japanese). The summoned culinary challenger picks which Iron Chef he wants to take a crack at and the contest begins.

The chefs just dont pull out the best dishes from their repertoire–that would be too predictable. Theres a catch to the contest, and thats the fact that every dish must contain the theme ingredient which is kept a mystery until immediately before the contest begins. At that time, Kaga brings forth a heaping helping of whatever the current mystery ingredient is in a production of smoke and pyrotechnics. Sometimes the ingredient is something basic like tofu or apples, but it can also be something obscure like ox tail or some obscure shellfish.

At that point, the chefs have an hour to prepare a seven course meal, served to a discerning panel of B-List celebrities that usually include a couple of ‘TV Presenters’ and a ‘fortune teller’. The judges rate and discuss each course and declare a winner. Its a great honor to beat one of the Iron Chefs, though its no easy feat.

What really brings the show together is the announcing. Theres a hysterical play by play announcer, an excitable color commentator, and an even more hyperactive sideline correspondent who will break in the commentary frequently with revelations such as observing that a chef is using fresh ginger in a dish or some similar piece of trivia. Apparently one of the announcers is a legit sumo wrestling announcer in Japan, making the strange juxtaposition between cooking shows and wrestling even more complete.

The dishes that are presented are always amazing and creative. Sometimes they might not be the most appetizing creations, but that’s to be expected when you have to make a desert with something like pickled carp as a theme ingredient. The creative process and the competition is what makes the show a must watch.

The Food Network now produces an American-ized version of the show entitled Iron Chef America. Despite the similar format, it pales in comparison to the original Fuji TV production.

Chicago’s Pump Room Restaurant Jumping Once Again

The venerable Pump Room Restaurant in Chicago is once again a beacon of civilized living. Famously memorialized in the Frank Sinatra song ‘Chicago’, the ‘jumping Pump Room’ was one of the first true fine dining establishments to open in the Windy City at the end of Prohibition. Almost immediately, it became a favorite of celebrities including the biggest stars in entertainment history–Frank Sinatra, Sammy Davis, Jr, Jackie Gleason, Dean Martin, Clark Gable, Humphrey Bogart, Ronald Reagan and Marilyn Monroe is just a very small list of the icons that made it a regular hangout. In the later part of the 20th century, however, it sort of fell off the map as a new wave of gourmet restaurants in the Windy City led by Charlie Trotter reduced it to a historical footnote.

The Pump Room opened in’38 under the ownership and management of Ernie Blyfield. Blyfield’s inspiration for the name and ambiance of his restaurant was an’th Century London pub frequented by celebrities and nobility, including Queen Anne. The ‘Pump Room’ moniker came from the hot drinks ‘pumped’ into the cocktails of its customers.

The Chicago Pump Room was an immediate hit, and for a time its Booth #1 may have been the most sought after table at any dining establishment in the country. In addition to Sinatra, who frequently held court with Jilly Rizzo and a number of other associates in Booth 1, it was occupied at various times by Clark Gable, John Barrymore, Gertrude Lawrence, Bogart and Lauren Bacall. Liza Minnelli may have been the youngest Booth 1 regular, taken there many times during her childhood by her mother Judy Garland.

Blyfield died in’50, but the Pump Room continued to be the preferred Chicago destination for the biggest names in show biz. A new era of celebrities held court there including opera singer Beverly Sills, Paul Newman, Robert Redford, film producer Robert Evans, Eddie Murphy and others. A funny story involving the Pump Room began when the former drummer for a British progressive rock band was refused entry due to his lack of a jacket. The drummer would use this as inspiration for his next album–’No Jacket Required’ which has sold over– million copies worldwide and established Phil Collins as a solo superstar. After the album’s release, the Pump Room sent Collins an apology–and an appropriate jacket for him to wear on his next trip to town.

The Pump Room was purchased by a large restaurant management group in the late’90′s. They spent a lot of money to renovate the facility, overhaul the menu and hire a top flight chef. While the Pump Room’s golden era trade mark flaming food served on a sword was a tragedy of city fire codes, the menu is now on par with any in the city serving a sophisticated interpretation of classic American cuisine. In addition to the revamped cuisine, the Pump Room upgraded its wine offering and expanded the bar area.

The Pump Rooms stature has been maintained by current executive chef Nick Sutton. The star of the place, however, is still the almost palpable sense of history that the dining room offers. Considering that the giants of civilized culture”from Bogey all the way to the Chairman himself”have held court in that room, it is a pretty intoxicating aura. Fortunately, the Pump Room is once again worthy of such legends, and its renaissance is a victory for culinary civility in a world too often overwhelmed with Olive Gardens and Red Lobsters.
