There are also chocolate candies, gummy candies, and chewing gum. It is obvious that Mexicans have different preferences when it comes to candy. The hotter, the better!A newer item in Mexican candy is called Salsaghetti. The package has straws of watermelon that look like pasta. They are spicy and come with a sauce to pour over it. Sometimes you might find someone enjoying a chocolate pattie candy that may include cinnamon, grounded almonds, and sugar. A popular candy throughout Mexico is known as Dulce de leche. It means “milk candy”. It is milk-based syrup that is similar to caramel by how it looks and tastes. It can be as a sauce, or as a caramel-like candy. Anchovies are a very important part of the flavor of Italian food.  However, many people, even fans of Italian food claim to not like anchovies.  Some people have bad memories of smelly little fish on pizza that have forever tainted their view of Italian food that includes anchovies.  Unbeknownst to many of these people is the fact that anchovies are widely used in Italian food and it’s likely that some of their favorite Italian food dishes are made with anchovies.

These small and often misunderstood fish are used extensively in Italian food and there comes a point when it is impossible to enjoy Italian food without running into these little guys.  Anchovies are a small saltwater fish.  They are only about three inches long but pack quite a flavor.  There are six different species of anchovies that are used in Italian food.  From April to September is the Sicilian anchovy season and these species are lighter in flavor than the Spanish anchovies that make up a bulk of the anchovies used in Italian food.

Anchovies must quickly be preserved in order to keep the flavor that is wanted for Italian food intact.  The most traditional way to preserve anchovies is packed in salt.  This is the best way to guarantee an authentic Italian food flavor.  Soon after the fish are caught they are cleaned and washed in salt brine and then set out to dry.  The fish are then layered in round tins with sea salt in between each layer.  The tins are then left to season for up to two months.  A weight is placed on top of the tins in order to compress the fish and remove any extra fluids and fat from the fish.  After the curing time is up they are sealed up and shipped off to be used in different Italian food dishes around the world.

Another way to preserve anchovies is to pack them in olive oil.  This is similar to the above method of preserving, except that after the seasoning period is over the fish are again washed and the scales, skin, and bones are removed before placing the fish in jars or tins of olive oil.  There are other ways to preserve anchovies for use in Italian food, but none are as popular as these first two.  Anchovy paste is readily available, however this paste does not have the anchovy flavor that is desired for Italian food and instead ends up tasting just plain salty.

When using anchovies in Italian food it is important to rinse them first.  They are much too salty the way you buy them and you want to wash away some of the excess salt.  If you are shopping for anchovies to use in a specific Italian food dish, make sure to buy just enough for the meal you are planning.  Anchovies do not last very long once opened and should be used right away to ensure the flavor.  If you have leftover anchovies then wash them and put them in a jar of olive oil.  Seal the jar and place it in the refrigerator.  This will only buy you five more days but if the fish are left in the tin after opening they will begin to get a metallic flavor that will ruin your Italian food.

The highlight of South African living is the breakfast, desserts, snacks and drinks. Easy to impress anyone. Breakfast varies between “mieliepap” and “beskuit”. “Mieliepap” is identical consistency as polenta and served having a teaspoon of sugar, butter and milk. A great creamy and healthy breakfast to find out you through the morning hours. “Beskuit” is rusks, dough baked inside the oven, broken apart then places back in the oven to dehydrate. The perfect breakfast, specially for all those living on farms, is homemade rusks, dunked into your morning coffee. If you happen to be more of a tea lover, try the fantastic local herbal tea called “rooibos”

In the morning you can chew on some “biltong” that is salty dried meat or “dro«wors”, that is dried sausage. You can not watch any rugby or cricket match without this salty snack. By now it is time to get more coffee served with banana, ginger of mealie bread, smeared with butter. Mealie bread is really a sweet bread, baked with sweet corn. You is likely to wonder why we have a very obsession with mealies? Well, mealies basically are Africa’s staple food. We make use of it to make breakfast, bread, crisps (or chips) and more.

As a special treat, why not try a Dom Pedro? This is ice cream with a little drop of milk along with a shot of your favourite whiskey of liqueur. Try Amarula liqueur, constructed from the potent marula fruit or van der Hum liqueur, constructed from fresh naartjies. This is a treat it’s not necassary to pass on.

Later the afternoon you can savor some “koeksisters”, a very sweet delicacy. Afrikaans “koeksisters” are twisted pastries, deep-fried and then sweetened with a very sweet sauce. Another favourite of mine is “ystervarkies”, a sponge cake, dunked in the home made chocolate sauce, rolled in coconut! Doesn’t that just sound magnificent?

If you prefer something less sweet, try the “melktert” (milk tart). This is usually a milk-based tart, absolutely gorgeous by eating it warm, just as it is made. If you want something savoury, try the “souttert” (savoury tart) consisting mostly of vienna sausages, cheese, onions, herbs and egg.

For your evening you can enjoy one the best known foods, “vetkoek”. This is a treat. You can take advantage of “vetkoek” in three ways. Dunk it as part of your tea, butter with syrup and cheese or filled with curry mince. No matter which one you choose, you do not be disappointed. If you are looking for something smaller, try the “plaatkoekies” (similar to crumpets) served with marmite or syrup or possibly try some pancakes with cinnamon sugar?

During the day you will never go thirsty. If you want warm drinks, there are the countless varieties of strong coffees, regular tea, “rooibos” tea, hot cocoa and my favourite, milo. This is a great drink loaded with vitamins and minerals, made with warm or cold milk. If you want cold drinks, try different ice teas and state of mind.
