Food: Five Tips For Keeping Food

Monday, May 31st, 2010

There can not be many people who do not like food, but the human race, being what it is, I guess there are a few. For the rest of us, eating is a source of daily enjoyment and, like drink, it is often used to mark a celebration. not only that, but different foodstuffs are used for the different meals or definite celebrations.

Festive meals were indubitably planned around the seasonal foods available, but some foods were transported great distances for the benefit of those who could pay for them. For example, my Dad thought it was a great treat to get an orange in his stocking on Christmas Day 60 years ago. How times have changed, very few children would think an orange a present, special or otherwise, any day of the year these days.

Nonetheless, the storage of food is still a daily concern and so, I have listed a few top tips on storing food hereunder, so that you will get the best from what you have bought or grown long afterward.

The Smells Of Summer: the scent of fresh garden herbs are one of the pleasures of Summer. You can preserve many of these herbs in the following way. Take a suitably sized glass bottle and cram your favourite herb into it until you can get not get even one more leaf in. Then fill it to the brim with your favourite oil olive oil (salad oil, not cooking oil). Put it in the strong sunlight for two days if you are using basil or two weeks for tarragon. Allow the water to part from the oil and decant the oil off into another bottle. Just one or two drops of this oil on a salad or spaghetti will bring back Summer memoirs.

Bin Ends: sometimes, after a party for example, you may wake up to several small quantities of wine in different bottles. Of course, you can pour like wines into each other. When you are done, pour a teaspoon of olive oil into each bottle. This will create an air proof barrier over the wine thereby preserving the wine for another week or two to accompany your favourite dinners – in the cooking process naturally.

Storing Garlic: cloves of peeled garlic will keep for months if you stuff them into a screw-topped jar and cover them with olive oil. As you use the garlic, top up with more olive oil. The oil will absorb some of the flavour of the garlic and make a fabulous (basis for a) salad dressing. If you have used tinned garlic, the rest can be preserved in the same way, but you should rinse and dry them first.

Saving Tomato Paste: if you suspect that you will not be able to use up the left over half a tin or tube of tomato paste soon, you can put it into the ice cube tray and freeze it into blocks until you are ready to use it.

Parsley Crumble: keep bunches of parsley in the deep freeze. Then, when you require it, you can just crumple the head of the bunch in your hand directly over the pan or plate where you require it and put it back in the freezer. The stalks can be used in the stock pot. in fact, this technique works for all herbs.

How To Brew A Spicy Hot Sauce

Monday, May 31st, 2010

Hot sauce has been a cherished dinner table staple for hundreds of years. The condiment can be made from nearly any pepper on the planet and therefore there are sauces available for just about anyone’s palette. No two sauces made from different hot peppers will taste the same so discovering your favorite can be a tasty journey. Once you do find your favorite, you can keep your addiction cheap by making the sauce yourself.

Peppers are the most important part of the sauce making. Different results are yielded from using different types of peppers. Poblanos and Jalapenos should be used for people who like milder sauces. Serrano and Habanero peppers will be more appreciated by those with more adventurous taste buds.

The rest of the ingredients can be gathered after the peppers that will be used have been chosen. One to two and a half pounds of the chosen peppers will be needed, depending on how mild or hot you wish your sauce to be. You’ll also need an onion, tomato sauce, and crushed red peppers. For taste, garlic and vinegar will be needed as well.

To start, chop your onion into penny sized chunks. You will be mixing them in a blender soon, so they do not have to be super tiny. Mince the clove of fresh garlic and put these two ingredients aside for the time being.

It is now time to mix the onions and garlic into the tomato sauce. Chop the peppers into smaller pieces and add them to mixture as well. Remember that the quantity of peppers is directly correlated to the hot sauce’s intensity. It’s also a good idea to wear rubber gloves while handling them to prevent getting any on your skin or in your eyes. Add the chopped peppers to your tomato sauce concoction.

In a blender, mix the ingredients until there are no large lumps. Pour the contents into a cooking pot and heat over the stove until the mixture begins to boil. After adding vinegar, remove the pot from heat and stir thoroughly.

You will have to store the sauce in a clean jar or large bottle with an airtight top. Cleaned out ketchup jars will suffice or you can also buy new bottles from a retail store. Once your hot sauce is bottled up it can be stored easily and used often. Hot sauce is delicious on just about any kind of food. Everything from sausage to vegetables can be flavored up with the perfect hot sauce.

Remember that when choosing peppers to keep your heat tolerance in mind. Do your homework and find out which peppers are too hot for you and which are just right. You can even try small samples of various peppers before you begin cooking so you’ll know ahead of time exactly what kind of heat you can stand. Even if you enjoy the taste of Habanero’s, don’t go overboard with how many you use. And lastly, make sure your newly made sauce is properly stored to prevent it from drying out or accidentally leaking onto open skin or other foods.

How To Use Dairy Products Correctly: Part One – Milk

Friday, April 30th, 2010

Basic Preparation Of Foods: Dairy Products

These basic tips may seem quite unnecessary for most modern householders with a refrigerator in the kitchen, but modern devices can make people lazy and it is still well-worth while knowing ‘why’ we ought do certain things. It is also worth remembering these tips when there is no refrigerator to hand or when it so small that it will not hold everything you need, such as when camping, boating or on holiday in some countries in the world.

MILK:

Milk has been called ‘nature’s perfect food’, because no other food, taken alone, can support adult life. It is of the first importance for the growth and development of young people, but it must be clean as bacteria also find it very nourishing and quickly multiply in it. If milk is not bought pasteurized, then it should be scalded and quickly cooled before consumption.

How To Scald Milk: Rinse a clean saucepan with cold water, pour in the milk and apply heat until bubbles form around the side of the pan. Keep it at this temperature, that is not letting it boil, for 3 minutes. Do not overheat, as milk burns easily. Pour immediately into a clean jug and place in a basin of cold water and cover with a fine cloth to prevent the ingress of flies and dust.

How To Keep Milk Fresh: If the milk is not be preserved in the receptacles in which it was bought, transfer it into a clean jug, which has been rinsed with cold water. A warm bottle will cause milk to stick to the sides and go off much more quickly. You should always keep milk in the coolest place in the larder and always keep it covered. it is worth remembering that draughts are usually at ground-level and that hot air rises. Never keep milk in an airless cupboard and in hot weather stand the bottle in a bowl of water with the cloth covering hanging in the water. The cloth will soak up water, which will evaporate, which dissipates the heat, ensuring that the jug remain cool. Keep milk away from strong-smelling foods, as it absorbs odours easily. Never mix new and old milk together.

Sour Milk: Milk straight from the cow is slightly alkaline, but as it ages, lactic acid is formed and it becomes what we call ’sour’. Pasteurizing or scalding the milk slows down this process. Milk which is ‘just on the turn’ can be revived by boiling with a pinch of bicarbonate of soda to restore the alkalinity. Once the milk has gone too far and has curdled, it can be strained through (cheese) cloth, thereby separating the curds from the whey. The curds can be used as a filling for cakes, tarts, scones etc and the whey can be used as the liquid for making scones, cakes and soups etc., as it still has much goodness.

Evaporated Milk: Evaporated milk is ordinary milk, which has had some of its water content driven off by heat in some way or other before being canned. Once reconstituted by adding water, it will last only slightly longer than fresh milk.

Condensed Milk: This form of milk is merely evaporated milk to which sugar has been added before being placed in its container. The sugar acts as a preservative and preserve the milk for about a week. Do not keep in the tin, but decant it into a jug or bottle.

Dried Milk: Dried milk comes is available in a variety of forms and particular attention should be paid to the instructions on the label. Niche market products can be bought especially for babies, invalids, convalescents and dieters, all of which contain varying amounts and types of added vitamins and minerals. Usually, they contain a great deal less fat than normal milk.

You Should Never Attempt To Cook Meat On A Grill

Sunday, February 14th, 2010

As humans, we all make mistakes. It is human nature to do so, and cannot be prevented each and every time. When it comes to barbequing, this rule is no different. We often make mistakes that we do not even realize until we taste our food.

Some mistakes just mean that the food you cook is not going to taste very good, while others could potentially mean a trip to the hospital, or a visit from your claims representative on your home insurance policy.

You must properly prepare the meat you are cooking, before cooking it. You should never attempt to cook meat on a grill when it is still frozen, or even partially frozen. Thaw your meat by sitting it out about 12 to 24 hours before you plan on cooking it, or by thawing it in a microwave.

Once meat is cooked, never place it back in on the same plate you had it on when it was raw. This could cause the spread of many unwanted illnesses. Cooking with charcoal lighter fluid can be good or bad. The lighter fluid will cause the food you are cooking to taste different then with other types of grills. Alternatively, attempting to not use lighter fluid may cause a lot of frustration due to the fact that charcoal can be difficult if not impossible to light without lighter fluid.

Never poke you meat while it is cooking. Poking holes in meat will cause the juice inside to leak out into the bottom of the grill. Not only will this make your food dry and unappealing in the end, but it also could potentially ruin your barbeque grill. At the very least, it will cause a buildup of unwanted grease and juices on your grill, which will make cleanup harder.

Once the meat is on the grill, try not to open the lid to many times. Each time you open the lid, you change the temperature in the grill. The constant change in temperature and the air flow will cause your meat to dry up quickly. Remember that the higher the heat is not always the better. While it is ok to quickly cook food, turning the heat up will just cause the meat to dry up and potentially burn.

While using tin foil or aluminum foil will make cleaning easier, it will cause your food to have more of a fried taste then a grilled taste. Never, under any circumstance, should you leave a grill alone when it is in use. Grilling does have fire involved, and accidents can happen.

Never place a hot grill against a wall, even if the fire is already completely out. A hot grill can heat up an exterior surround to the point of combustion. Also, do not place the grill cover back on until you are sure that the grill is completely cool. You grill should be cleaned after apiece and every use, no exceptions. While no one likes cleaning the grill, it is essential for the life and country of your grill. If you allow your grill to sit dirty, not only are you causing a potential fire and health hazard, but you are finally making it harder on yourself when it does come time to clean your grill.

Make sure that your grill is completely cold before cleaning it. Spraying oil and cleaning agents on a hot surface could cause it to ignite. Be careful, because the grill may seem cool, but may still be hot in certain areas. You do not want to sustain a burn.
