Many of the foods we associate with Mexican cuisine are really Tex-Mex, not authentic Mexican. It’s true. Most of the dishes we love at Mexican restaurants in the United States are adaptations instead of authentic foods you would find if you went to Mexico. In fact, the cuisine in Mexico is very regionalized. While there are some consistencies, each region has their own specialties. You will soon learn that many of the foods used in Mexico have changed very little from the days of the Aztecs. Squash, avocados, beans, corn, tomatoes, and chilies still feature prominently.

 

For example, if you visited the area around Puebla in Mexico, you would see lots of dishes covered with mole sauce. Mole is a thick, sweet sauce made from spices, herbs, and chocolate. It is traditionally served with turkey, but can also be found with other dishes.

How To Brew A Spicy Hot Sauce

Hot sauce has been a cherished dinner table staple for hundreds of years. The condiment can be made from nearly any pepper on the planet and therefore there are sauces available for just about anyone’s palette. No two sauces made from different hot peppers will taste the same so discovering your favorite can be a tasty journey. To start, chop your onion into penny sized chunks. You will be mixing them in a blender soon, so they do not have to be super tiny. Mince the clove of fresh garlic and put these two ingredients aside for the time being.

It is now time to mix the onions and garlic into the tomato sauce. Chop the peppers into smaller pieces and add them to mixture as well. Remember that the quantity of peppers is directly correlated to the hot sauce’s intensity. It’s also a good idea to wear rubber gloves while handling them to prevent getting any on your skin or in your eyes. Add the chopped peppers to your tomato sauce concoction.

In a blender, mix the ingredients until there are no large lumps. Pour the contents into a cooking pot and heat over the stove until the mixture begins to boil. After adding vinegar, remove the pot from heat and stir thoroughly.

You will have to store the sauce in a clean jar or large bottle with an airtight top. Cleaned out ketchup jars will suffice or you can also buy new bottles from a retail store. Once your hot sauce is bottled up it can be stored easily and used often. Hot sauce is delicious on just about any kind of food. Everything from sausage to vegetables can be flavored up with the perfect hot sauce.

Remember that when choosing peppers to keep your heat tolerance in mind. Do your homework and find out which peppers are too hot for you and which are just right. You can even try small samples of various peppers before you begin cooking so you’ll know ahead of time exactly what kind of heat you can stand. Even if you enjoy the taste of Habanero’s, don’t go overboard with how many you use. And lastly, make sure your newly made sauce is properly stored to prevent it from drying out or accidentally leaking onto open skin or other foods.

Lots of residents in the US know a little bit about Cinco de Mayo. Some even celebrate it each year in one way or another. There are many who do not understand its history, however. If you were to ask an average American about why Cinco de Mayo is celebrated, they will likely guess it is Mexican Independence Day. That is not right. Mexican Independence Day falls on September 16.

In the 1950s, the United States’ Good Neighbor Policy encouraged its people to reach out to neighboring lands. This is when Americans were introduced to Cinco de Mayo. In the ’60s, the holiday was pushed further into the public eye by Chicano activists as a way to spark cultural pride amongst Mexican-Americans.

By the time the 1980s rolled around, the holiday had been slowly growing in notoriety. Throughout this decade’s commercialism, Cinco de Mayo had been advertised as an excellent holiday to devote to drinking alcoholic beverages from American companies. It is because of these companies that Cinco do Mayo had become mainstream in American culture, although the true meaning of it, to celebrate Mexico’s victory against the French in 1862, was diluted.

As Cinco de Mayo became more mainstream, more Americans wanted to explore better ways to celebrate. They began researching the Mexican traditions, foods, and music that would make Cinco de Mayo a holiday to anticipate every year.

Cinco de Mayo has become a wonderful reason to indulge ourselves with margaritas, nachos and all things Latino. You can get all dressed up in bright traditional clothing, grab some sombreros, throw a Mexican flag up on the wall, hang dried chilies around the house and just have fun. The schools teach about this holiday, so have your children share what they have learned and incorporate it all into your celebration.

Some people plan big parties for the 5th of May. It is no longer a holiday just for the Mexican community. People from all ethnic groups join in the fun. Some communities have festivals and parades to help the celebration mood. In some big cities, the celebration has grown to large proportions. Los Angeles, New York and Port Huron, Michigan are sites of very large Cinco de Mayo celebrations.

You can always stay home and celebrate with friends and family. To plan your celebration right, start thinking about how you can cook Cinco de Mayo food, find salsa music and supply fun and colorful decorations. Your private bash can become as fashionable as the community parties thrown around town can.

Cinco de Mayo is a great reason to explore those Mexican recipes you have been curious about. Make some great food for your family to enjoy and share some Mexican culture. Invite your friends to come over and have them bring some snacks.

Long Island Mexican Oasis

Recently Me and a Buddy of mine stopped at the Meson Ole Dinner in Southampton on Long Island in NY, A Mexican and Spanish Restaurant.

Some of you may know I am a Biker, As any Biker knows some times the greetings we get when we walk into a place can be a look of “Oh No” and a half hearted “can I help you?”, Is it right? Well of course not, but that’s a different article. The Greeting We got at Meson Ole was a very warm friendly one and we felt welcomed in.

The Decor of the place was great and you could almost believe you where some where down in Mexico. We where promptly brought over some Nachos and Salsa and some fresh hot Bread and Butter. We ordered a Pitcher of Sangria, A drink I do not believe I have ever had before but I enjoyed none the less!

We ordered a Bunch of food and the Service was pretty fast. Now even the best service means nothing if the food is not good, Well the food was incredible. We ordered a set up where you made your own Pepper Steak Burritos and also a plate of Ham and Cheese Burritos. It was all made to perfection, The Pepper Steak was served in a separate pan and it was still sizzling when it was placed safely on the table ! I could not have been happier with the taste and preparation of the food! While we where enjoying the meal the waiter made sure we where happy at all times. When the Bread was finished more was served to us. We ate so much ran out of Burrito wraps, That is not a complaint because as soon as it was notice more where quickly brought to the Table.

I eat at many places as I really love to eat, But some times I come across a place like the Meson Ole Dinner where I feel I must share the experience with others! I was happy to find out that the Meson Ole has 8 locations across Long Island NY and two in Naples Florida (That’s a bit of a big jump in the Chains Locations) Good food can sometimes be hard to find, Both Great Food and Great service at one place can be almost imposable to find these days!
